Sweet Saturday: Caramelized Bananas & Toffee Sauce

The lovely Catherine from Boutique Bake has been sharing their delicious baking recipes with us in her Sweet Saturday series (you can check out more Boutique Bake recipes here).

And today, since it's the perfect day to have a summer BBQ (...sure it is) we are delivering this classic barbie dessert! 

Where there’s a whisk, there’s a way. 

This is one of my absolute favourite desserts to serve in the summer; it’s the perfect end to a lovely BBQ. The bananas can either be placed under a hot grill or else on the BBQ, and once they blacken completely they turn into a lovely caramelized creation. I have served my version with homemade toffee sauce and vanilla ice cream, which is a really simple yet delicious combination.

Let’s get started!

Ingredients:

  • Bananas (one per person, as needed)
  • 60g Chocolate Chips
  • 40g Pecan Nuts
  • Ice-Cream, to serve

Toffee Sauce:

  • 75g butter
  • 150g light brown sugar
  • 100g golden syrup
  • 100ml cream

Method:

  • Put the bananas on some tin foil
  • Place on the barbecue/place under the grill (at a medium heat), turn occasionally to ensure both sides of the banana cook evenly
  • Allow about 20-25 minutes to cook through, the skin will have turned completely black and the fruit will have softened
  • Remove the bananas from the heat, and allow to cool slightly

Now for your Toffee Sauce:

  • Place the butter, sugar and golden syrup in a heavy based pan over a low heat
  • Stir slowly until all ingredients are nicely combined, this should take about 5 minutes
  • Remove from the heat and pour in your cream and stir through
  • Pour your sauce into a jug and it's ready to serve

To serve:

  • Place the banana on a plate and slice open, to reveal the lovely caramelized centre
  • Scatter some of the chopped pecans and chocolate chips over the banana

  • Next place a scoop of ice cream in the centre, and finally pour over the toffee sauce
  • Enjoy!
