Boutique Bake Recipe: Almond, Date & Chocolate Bites

The lovely Catherine from Boutique Bake has been sharing her delicious baking recipes with us (you can check out more Boutique Bake recipes here) and today we're going nutty and making some almond, date and chocolate bites.

This is an easy peasy recipe so even if you don’t feel like you are a natural baker (are butter fingers the baking equivalent of gardening green fingers?), why not give this one a go?

If you are an Instagram fiend and follow loads of foodie accounts like I do, you will definitely have seen these on your feed recently. And today I’m going to share my recipe for almond, date and chocolate bites. These are an almost truffle-like treat, but they are definitely a healthy one.

And there is actually no baking involved this week, so these are really quick and easy to put together. They are the perfect afternoon snack if you fancy something sweet or a great energy boost after the gym (it will make you want to go, just to have these to look forward too).

These sweet treats involve whizzing together dates and nuts, and I have added some cacao powder for a lovely chocolatey taste, if you can’t get your hands on cacao powder, you can add in some cocoa powder or leave plain, as the dates give a lovely sweetness anyway!

Ingredients:

  • 60g flaked almonds
  • 2 teaspoons cacao powder/cocoa powder
  • 60g dates
  • 30g coconut oil
  • 30g cashew nuts

To coat:

  • 60g crushed pistachios
  • 40g flaked coconut

Method:

  • Place all your ingredients, except the cacao and coconut oil in a food processor
  • Blend at medium speed, until all the ingredients are well combined
  • Next add in the coconut oil and cacao powder

  • Once nicely combined, now it’s time to shape bites!
  • Take a small amount of mixture in your hands, and roll into a small ball (you should get approx.12 from this mixture)
  • Next, roll your bite in some chopped pistachios or coconut flakes, to cover the surface

  • Once you have used up all your mixture, place your bites in a dish and cover with some cling film
  • Pop in the fridge for one to two hours to set, and then they are ready to eat!
